The seven dwarves will be all set for a day down the mines with a bowl of toasty oats inside ’em.
All those nuts and seeds are a nutritionist’s wet dream. They’ll make your nails strong, your hair shiny, AND stave off the mid-morning munchies.
50g each whole almonds, brazil nuts, cashews and pecans
50g coconut thread
300g rolled oats
50g each pumpkin and sunflower seeds
100g dried apricots
3 tablespoons water
3 tablespoons olive oil
1 cup honey or maple syrup
Turn the oven on to 140C. Roughly chop the nuts and put them into large mixing bowl with the oats and seeds.
Gently heat the syrup ingredients in a small saucepan before pouring over the muesli mix and stirring to coat.
Spread evenly over the base of a large roasting dish. Bake for 40 minutes, turning and mixing every 10 minutes, until it’s deep gold.
Take it out of the oven – don’t worry if it’s soft at this stage; it’ll go crunchy as it cools down. Stir in the dried apricots, or whatever other fruit takes your fancy, and transfer into an airtight container when cold.
